It looks like the tradition of having these seafood treats on Christmas Eve began with Irish immigrants in America in the mid-1800's. Traditionally, Irish-Catholics would avoid meat the day before their huge, Christmas feast. The dish of choice was a stew made from the ling fish. Once it America, ling was difficult to find, but oysters were plentiful. Thus, oyster stew became the new tradition.
We aren't quite sure when Americans began eating clam chowder more often than oyster stew, but there are many families today that list that delicious dish as the food that they expect on the table Christmas Eve. That, along with fried oysters seemed to pop up a lot during our research.
